Lisa's Greek Potato Salad

This recipe is very simple, but I got so many compliments on it, I just had to share. Unfortunately, it isn't my own creation. I would have loved to take the credit for this one. I'm not sure where it comes from, but I got it from my friend Lisa who shares my love of feta cheese. So does her hubby, Steve. He also suggested kalamata olives instead of regular black olives, which I think would be a fabulous idea.

Greek Potato Salad

ingredients:
  1. 8-10 redskin potatoes cut into bite sized pieces and roasted with a little salt and olive oil*
  2. 1 green bell pepper
  3. 1 yellow or orange bell pepper
  4. 1 can black olives - I used sliced, next time I will use pitted kalamata
  5. 1 8 oz container of feta, cubed
  6. 1/2 pint grape tomatoes
  7. 1/2 red onion diced tiny
  8. Greek salad dressing - recipe below or use your favorite store bought dressing

*roast cut potatoes at 400 degrees for about 45 mintues or until knife comes out easily

Greek Salad Dressing:

2 T Greek seasoning

2 T water

1/2 olive oil

1/3 c red wine vinegar

1 1/2 T fresh parsley

1 T fresh oregano

1/2 T fresh mint

In a large bowl, combine all of the ingredients and pour over enough dressing to coat, but not over- dress.

  1. That salad looks amazing! I love the colours and it does look exceptionally delicious. :)I wld love to make this if only I knew what Greek seasoning was or at least what it tastes like.
